Kick It Up Cucumber Jicima Slaw

Give your cucumbers a kick with this slaw- they will be amazed to see how these different flavors compliment each other.

Recipe time: 30 minutes


1 large cucumber
1 small jicama or tart green apple
2 teaspoons honey
1 lime or 2 tablespoons of vinegar (optional)
A few pinches of chili powder


Grater or knives or peeler
Cutting boards
Measuring utensils
Hand held juicer or squeezer
Mixing bowls


  1. Slice cucumber and jicama (or apple) into 2-3 inch matchsticks. Alternatively, you can grate the produce or peel into ribbons. Whatever you decide, consistency is key.
  2. Juice lime.
  3. Whisk lime juice with honey.
  4. Toss with lime mixture.
  5. Add salt and chili powder to taste.
