Light Creamed Spinach


1/2 Tbsp of unsalted butter
1/2 onion diced
1  garlic clove, chopped
1  10 oz frozen chopped spinach, defrosted and drained well
1/4 tsp salt
1 Tbsp all purpose flour
1  1/2 cup of low sodium chicken broth
1/4 cup of low fat sour cream

Time: 45 minutes

This Southern inspired dish keeps the benefits of spinach at the forefront but allows kids to love their greens!


  1. Heat butter in a pan over medium heat.
  2. Add onion and garlic and saute for 3 minutes.
  3. Sprinkle in flour, stir and cook for 30 seconds.
  4. Add remaining ingredients and cook for 3-5 minutes until mixture thickens.
