Summer Squash Roll Ups

Nutritional Sentence

Yellow squash is a good source of Vitamin B6, Vitamin C, and Potassium.

Recipe time: 30 minutes


3-4 summer squash
4 ounces goat cheese
1/4 cup olive oil
Basil or any fresh herbs
Salt and pepper


Mixing bowl
Pastry brush
Knives or cutters
Cutting boards
Measuring utensils


  1. In a small bowl, add goat cheese and 1 tablespoon of chopped herbs.
  2. Slice squash lengthwise into 1/8 inch thick slices.
  3. In a small bowl combine 1/4 cup of olive oil and 1 tsp of salt and pepper.
  4. With a pastry brush, lightly brush the olive oil mixture on both sides of squash.
  5. Heat in skillet on high about 3-4 minutes.
  6. Place squash on plate.
  7. Spread each piece of squash with 2 tsp of the goat cheese.
  8. Roll up, secure with a toothpick and place on serving platter.
  9. Repeat with remaining pieces.
